Coconut Raspberry CBD Energy Bites
Ingredients:
- 1.2 ounce bag of freeze-dried raspberries
- 4 tablespoons shredded dried coconut
- 1/2 cup pumpkin seeds
- 1/4 cup hemp seeds
- 1 cup pitted dates
- 1 tablespoon cocoa powder
- 1 tablespoon Coconut Oil
- 1 tablespoon Wild Rosin Honey
Instructions:
Pour the contents of the freeze-dried raspberries into the base of a food processor.
Turn on high until the raspberries are ground up into a fine powder, about 20 seconds.
(If you're using powdered raspberries, skip this step!)
Pour the raspberry powder onto a plate and set aside.
Next, combine the pumpkin seeds, hemp seeds, dates, coconut powder, coconut oil, and Rosin honey into the base of your food processor.
Process on high until the ingredients have turned into a coarse batter, about 60 seconds.
Pour the mixture into a mixing bowl and use your hands to shape the batter into 12 balls.
Roll half of your energy bites in the raspberry powder as a coating.
Roll the other half in the dried shredded coconut.
Refrigerate the energy bites for at least 30 minutes before serving.
Serve slightly chilled!
You can store your energy bites in the refrigerator for up to 7 days!

A Healthy Snack or Dessert
Energy bites are a go-to snack in our office. They’re small, travel-friendly, and sweet enough to satiate sweet tooths, without going overboard. The sweetness comes from dates, which are more grounding and wholesome than traditional refined sugar. The gorgeous red color (and the delicious raspberry taste) comes comes from raspberry powder. You can easily make your own by grinding up freeze-dried raspberries, or you can track some down online!*
Coconut Oil + CBD
Coconut oil is an important ingredient in our Coconut Raspberry CBD Energy Bites. After all, it helps bind the whole bite together. Also important, it’s the vehicle for delivering the CBD in our CBD Energy Bites. And last but not least, coconut oil is a helpful fat for boosting the body’s absorption of CBD.
